I don't think someone would type a prompt into ChatGPT "write me a poem about dogs playing poker" and then say "I am a poet because I wrote this prompt and then a poem appeared (and I repeated this twice until I was satisfied with it)". I wonder why the visual equivalent "I wrote this prompt and then an image appeared (and I repeated this twice until I was satisfied with it)" tempts some subset of people to say "I am an (AI) artist". It might be because no one has coined a word that sounds better (or as one of my quondam coworkers would say, "sexier") than "diligent AI end-user", such as "visual prompt engineer".
